  • Ensure monthly F&B forecast are achieved for all outlets.
  • Strictly adhere to operating expenses and ensure all costs are controlled in all outlets; monitor and analyse menus and products of competitive restaurants and bars.
  • Assign responsibilities to subordinates and check their performance periodically.
  • Assist and coach in the operation and be visible during peak times.
  • Develop departmental trainers and assign training responsibilities.
  • Handle guests' complaints, requests and enquiries on F&B and service.
  • Be entirely flexible and adapt to rotate within the different outlets.
  • Control requisitioning, storage and careful use of all operating equipment and supplies for the outlets.
  • Establish a rapport with guests; maintain good customer relationship and assist in updating guest history.
  • In charge of MICE.


  • Holder of a degree in Hospitality Management or equivalent.
  • Minimum of 5 years' experience in a similar position.
  • Strong F&B background to provide strategic leadership direction to the F&B department.
  • Excellent communication, organisational and leadership skills.
  • Fluent in English and French (a third language will be an advantage).
  • Should be creative, innovative and service oriented.
  • Proactive person who is able to work under pressure and odd hours.
  • Well versed with Microsoft Office Tools.
